Shepard Avocado Delight Recipe

Ingredients:

  • ½–1 Shepard avocado, sliced
  • 2 boiled eggs, finely chopped
  • 2 tbsp good-quality mayonnaise
  • ¼ tsp salt
  • ¼ tsp cracked black pepper
  • ¼ tsp garlic powder
  • ¼ tsp onion powder
  • 2 tsp crumbled Greek feta
  • ½ handful rocket
  • 1 tsp spicy pickled relish
  • 2 tbsp balsamic vinaigrette
  • Fresh bread of your choice

Method:

  1. Mix boiled eggs with mayonnaise, garlic powder, onion powder, salt, and pepper to create a creamy egg mayo.
  2. Lay half of the sliced Shepard Avocado evenly on the bottom slice of bread to form a buttery base.
  3. Spread the egg mayo generously over the avocado.
